Ok, so there’s a whole bunch of butter in here — but in moderation, this treat is worth it.

Banana Bread

Ingredients:

2 bananas (overripe)

1 cup of sugar

2 eggs

1/2 cup softened unsalted butter

2 cups of flour

2 cups of blueberries (one small package works)

1/4 teaspoon of salt

1 teaspoon of vanilla extract

1 teaspoon of baking soda

2 tablespoons of milk

1 teaspoon of vinegar

1 tablespoon of cinnamon

 

Blueberry Banana Bread

To start – preheat the oven to  375 and get ready to mix.

Combine the softened butter and 3/4 cup of sugar in a bowl and set aside. (I cut the butter into smaller chunks and microwaved for a few seconds to speed up the process first before mixing with the sugar)

In a large mixing bowl, combine the bananas, eggs, milk, vinegar, vanilla, salt and baking soda. Mix until as smooth as possible (but some chunks are ok). If you have a hand mixer or small blender — this can work here too.

Add 1 cup of flour to the banana mixing bowl and blend together. Then add the butter/sugar mixture you set aside to the bowl as well. Add the remaining flour at the end and mix thoroughly. Once combined — gently add the blueberries and mix evenly.

Sprinkle a handful of granulated sugar into the bottom of the cooking loaf pan — then pour in your banana bread mixture into the pan.

Dash a thin layer of cinnamon on top of the batter before tossing it into the oven for 30-40 minutes. Once done — check with a toothpick that comes out clean after poking it into the middle of the bread.

Let sit in the pan for about 15 minutes and then enjoy!
